Vegan Potato Bake Pie


  • 1 carrot
  • 2 zucchinis
  • 2 squash
  • 3 large mushrooms
  • Ginger
  • 1 chilli
  • 500g potatoes 1 bunch Rosemary
  • 1 bunch dill
  • 1 can lentils
  • 1 can adzuki beans
  • 2 400 g roasted tomatoes
  • 1 onion
  • 1 clove garlic
  • 1/2 bunch asparagus
  • 4tbs of vegan butter
  • 2 tbs cumin
  • 1 tsp coriander
  • 1 tsp smokes paprika
  • 1 tsp sweet paprika
  • 4 tbs tamari soy
  • 3 tbs honey or agave syrup
  • Salt and pepper to taste


Chop all your veggies and gather all your spices and get your potatoes on a boil. In a medium pot on a medium heat fry off your onion, chilli, ginger and garlic until golden brown then add in your spices, honey or agave syrup and tamari soy and stir until combined the add in your carrot and other veggies and combined fry for 10 min add in your tomatoes, lentils and beans and combined and fry and reduce for 10 min . By this time your potatoes should be cooked strain and add back to the pot add your butter salt and pepper I even added some chopped dill and Rosemary and smashed until creamy.

Lay your veggie mixture into a baking tray and add your mash potato on top. Brush with butter and bake at 180 for 20-30 min until golden pull out let cool and serve, enjoy.
