Sweet Potato Pancakes

INGREDIENTS

  • 3 small sweet potato cubed
  • 2 tbs of vanilla extract
  • 1 tsp cinnamon
  • 1 tab clove ground
  • 1 cardamom pod cracked and ground
  • 1 tsp nutmeg
  • 3 tbs maple syrup
  • 2 tbs coconut yoghurt
  • 2 cups all purpose flour
  • 1 1/2 cups soy

METHOD

Combine all the spices and coat the sweet potato and Bake in the oven at 180 for 15 min or until soft. When cooked let cool and place in a blender add maple syrup and yoghurt and 1 1/2 cups of soy and purée.

In a separate bowl add 2 cups flour, pinch salt, 2 tsp of vanilla extract, add the purée and combined, heat a small pan and add two tbs of the mixture in the pan and cook until golden.

Serve with your desired fruits and nuts, jam and coconut yoghurt.
