Coconut Ramen

INGREDIENTS

  • 2x 400ml coconut cream
  • 1 tsp cumin
  • 1 tsp sweet smoked paprika
  • 1 tsp Korean spiced flakes or chilli flakes
  • 1 tsp onion powder
  • 3 tsp agave syrup or honey
  • 4 tbs tamari soy
  • 2 tsp veggie stock powder
  • 1 clove garlic finely chopped
  • 1 knob ginger finely chopped
  • 1 red chilli
  • 1 bunch broccolini plucked
  • 1 yellow squash finely sliced
  • 2 servings of ramen noodles

METHOD

Combine your garlic, ginger, spices, agave, soy and lime juice in a stone grinder and grind until fragrant add more lemon if you want it tangy.

Next in a large saucepan drizzle a little bit of oil in the pan bring to a high heat and fry off your spice mix until garlic is just starting to brown next add your veggies and cover in the mixture and fry for 1 minute next add your coconut cream and stir in and taste you can adjust it with lime juice agave soy or extra spices if you desire. Let your sauce simmer for about 5 min on a medium to low heat stirring occasionally. Now get your noodles on to speed up the process boil a kettle of water then pour it into your pot and light your water should start boiling straight away, now add the noodles once cooked drain noodles and distribute into prepared bowls, now scoop your coconut broth and veggies over your noodles until covered top with sprouts fresh chilli even fresh Cilantro and enjoy.
