Big Pho

INGREDIENTS

  • Lots of fresh herbs & vegetables of your choice.

BROTH

 

  • 4 star anise
  • 4 cinnamon sticks
  • 4 cardamom pods
  • 1tsp coriander seeds
  • 2 tbsp tamari sauce
  • 3 tbsp Sakai sweet optional
  • 2 cups veg stock
  • 2 carrots halved
  • 1/2 fennel bulb halved
  • 10cm sliced and roasted ginger
  • 2 onions halved and roasted
  • 2 cloves garlic peeled and roasted

METHOD

First peal onions, garlic and slice ginger and bake on the heights temp until golden brown.

In a large pan dry fry your spices, stir occasionally so they don't burn once fragrant add in your garlic,onion,ginger, carrot, celery, fennel, veg stock, Sakai and tamari sauce once cooked strain your broth and add it back to the pan and reduce, cook your noodles and set aside add to your bowl then top with bean sprouts herbs like basil mint coriander, add boc Choy snow peas sweet loaf cabbage daikon okra and mushroom chill optional for heat pour your broth over your dish and enjoy squeeze lime juice over it for extra flavour.
